Everyone knows you have to get the water expressed out of the potatoes in order for latkes to “taste right.” But I didn’t like squeezing water out of potato gratings in cheesecloth scraps until my arms fell off. No one wants to spend all day grating a mountain of potatoes plus part of your knuckles.
It turns out that immediate gratification is possible with the right equipment.
