Irish Mex is the best.

I grew up on Irish beef stew, but I have to say, I like its Mexican cousin better: Carne Guisada.

I love the stew’s addition of tomatillos, along with tomatoes. I substitute mild Hatch chiles for the spicier varieties— the flavor is just as deep.
